Laboratory for Colloids and Food Interface Phenomena | Assoc. Prof. Guy Machrez

The Laboratory for Colloids and Food Interface Phenomena focuses on the study of particle-based systemsand interfacial (Colloids and Interfaces) processes for advanced applications in the food sector, combining polymer science and nanomaterials. Its activities include the development and investigation of particle-based systems, with an emphasis on Pickering emulsions, foams, and hybrid colloidal structures.

Key research areas include: the development of living hybrid materials based on individual cell encapsulation for probiotic incorporation in food; nanoparticle-based protein carriers for DNA and RNA delivery in plants and fungi; magnetic emulsions for food pathogen sampling and sensing; the development of soft magnetic robots for biomedical applications; and the design of anti-biofilm surfaces for food safety.
