Last week our undergraduate students took front stage and won leading prizes in the European ”Functional Foods” challenge of the FOOD SOLUTIONS program managed by EIT Food mentored by Avi Shpigelman, Uri Lesmes, and Maya Davidovich-Pinhas.
This year the challenge included the development of innovative healthy and tasty food products that would offer consumers unique functional bioactivity or health benefit. Student teams from Spain, Italy, and Israel had to develop products from ideation to a full prototype and business plan to be pitched in front of a professional panel on Nov. 9th in IATA (Valencia, Spain). FiberBite won the 2th prize with a vegan Malabi like dessert based on Psyllium (a known fiber source), oil with cannabinoid CBD, and rose water. The group included Alice Popik, Eden Beck, and Hadar Perel Zlotnik from the Faculty of Biotechnology and Food Engineering, Technion of and Jonathan Wolloch and Matan Zlotnik from the Faculty of Data and Decision Sciences, Technion.
NutriMaffin won the 3rd prize with a high protein savory Muffin based on Mankai (the smallest vegetable in the world), lentils, and sweet potato. The group included Yuval Richtman, Lidor Bibi, Neriya Davidovich, and Gal Gatenio from the Faculty of Biotechnology and Food Engineering, Technion and Shahar Shoham from the Faculty of Data and Decision Sciences, Technion.
